My first few days on simple Start & Recipes



Hello everyone, My new years resolutions going well! Exercising more, getting things organised and study back on track and eating healthier!

Even our dog molly is helping to keep us on track. 

I was snuggled up in my pjs this evening on the couch. When she came into the room with her lead in her mouth and the "walkies" look on her little mutt. So I reluctantly pulled on my trackie, runners, hat, scarf and gloves and did a quick half hour walk around the block and I am so glad I did it!! :)

My first few days on simple Start have been going really well. My mam and I have been doing a good bit of experimenting so here are our meal plans over past 3 days! 

Day1
Breakfast: Porridge, alpro soy unsweetened almond milk, stewed apple and cinnamon 
Lunch: Baked potato and beans. 

Dinner: Zarzuela - Fish stew and toasted multi-seed pat the baker slimbo (ss approved by leader)

Snacks: Pineapple
Raspberry and Apple Crumble

2 treats: 2 tbsp cream (with crumble)
1 ww bar

Day 2
Breakfast: Shredded wheat, sweetener and alpro soy almond milk unsweetened.

Lunch: Whole wheat pasta mixed with ham, baby tomatoes cooked in oregano, garlic, basil and balsamic vinegar. 

Dinner: Little Christmas (6th Jan) Turkey and Ham, potatoes, carrots, sprouts, peas, parsnips and potatoes. 

Snacks: Crumpet with f&h jam
Pineapple

2 Treats: Fruit and jelly topped with custard pot (Trifle!)
WW Bar

Day 3

Breakfast: Shredded wheat, sweetener and alpro soy unsweetened almond milk

Lunch: Carrot and Coriander Soup
WW brown bread, scrape aldi lighter than light mayo, chicken and sprinkle od sage sambo

Dinner: Beef Goulash and potatoes


Snacks: Crumpet with f&h jam
Plum and banana
Wheat bran muffins

2 treats: 1 low fat drinking choc sachet and ww bar

Recipes:

Zarzuela

Zarzuela is a Spanish saffron fish-seafood recipe.
 Servings: 6
Ingredients
·         900g cod
·         150g mussels
·         150g  scallops
·         1 bag frozen prawns and 2 frozen lobster pieces
·          800g potatoes
·         1 can of tomatoes and 1 carton of passata
·         3 peppers
·         1/2 bunch fresh parsley
·         4 garlic clove
·         2 onion
·         1 glass Natureo white (1pp)
·         Pinch of saffron and pinch of cayenne pepper
·         1 fish stock cube
·         Fry light
·       Pepper, to taste
Utensils
·         Cutting board + knife
·         Non-stick skillet
·         Wooden spoon
·         Large cooking pot
·         Large saucepan + colander
Method
Peel and chop onion and garlic finely. Chop bell peppers, discarding the seeds and inner membranes. Chop parsley finely. Par-boil potatoes. Set all aside.
Heat a large cooking pot with half a liter / 2 cups tap water on medium heat. Add fish stock cube, garlic, bell pepper, tomatoes and passata. Then add wine, saffron and pepper and other herbs to taste. Cook fish and add to sauce. Stir. Cook for 20 minutes over medium-low heat, stirring occasionally.
Meanwhile, wash the mussels with water. Heat a deep skillet with a glassful of water and a little more white wine, 1 onion and a little parsley. Add the mussels. Cook for 15 minutes.
Add potatoes to dish and allow to simmer for another ten to fifteen minutes. Sprinkle the remaining parsley and more pepper, to taste. Stir and serve everything together in soup plates.


Apple and Raspberry Crumble

Ingredients:
2 cooking apple
cup of raspberries
2 and half cups
egg white
sunflower fry light
Sweetener to taste

Method:
Layer apples sliced and raspberries in dish. Cover in sweetener to taste. Mix porridge oats, tbsp sweetener and egg  white together. Cover the fruit with the crumble and spray with frylight. Bake in oven for 20mins. 


Beef Goulash


Ingredients
900g round steak beef
Squeeze tomato puree
Can tomaotoes
Salt
Garlic
Pepper
Splash soya sauce
Splash worcheister sauce
Cup wheat bran
3-4 carrots
1 parsnip
1/4 turnip
2 sticks celery
800g potatoes

Method

Fry onion and garlic. Chop all veg and put to one side. Put beef into zip lock bag and wheat bran and shake. Then stir fry this on pan. Then add can of tomatoes, herbs and soya and worcheister. Add all veg and simmer for ten pins. Slice potatoes thinly. Pour all into dish and top off with potatoes. Cover in tinfoil. Cook in oven for first 2 hrs and 150degres and then remove tinfoil and cook at 200degres. 

Wheat Bran Muffins

Ingredients
2 cups porridge oats
2 cups wheat bran
1 grated carrot
2 mashed bananas
Tsp Vanilla essence
Tsp baking powder
Tsp cream of tartar
1 egg beaten and drop of egg white beaten
Cup of blueberries
Fry light
Cinamon

  


Method

Whizz porridge and wheat bran until becomes finer texture in food processor. Add cinnamon, baking powder and cream of tartar
Using electric food mixer/beater. Beat eggs and vanilla essence. Beat in banana, carrots then beat in porridge and wheat bran. If needed add tbsp of milk. 
Spray muffin cakes with fry light. 
Spoon mixture into muffin cases. 
Bake in oven 180degres for 20 minutes.

Before I tried this I was obsessed with weighing and I mean if there was 10g extra I would freak so if this works I may be converted!

2014 Plan!

Hello! I hope you all had a lovely Christmas!

Just a quick blog post to share a few things!! 


Here are a few NSVs over the past few days!

 1.I went for a walk on Christmas day!! woo go me!!! :) I  got a gym membership as a present from my sister!! So, I went to the gym today and managed to run for 6mins straight on threadmilland I walked fast for the rest and swam 8 lengths! Very pleased with myself. :) 

2. I also weighed myself on gym scales and I have stayed the same over Christmas? omg is that possible?! Hopefully I can keep that sts or maybe even lose! Who knows?? Anyways even small gain is manageable... I am in control and thats all that matters. Atleast I can say I have defo changed my ways and there is no going back to the way I was last year!

Christmas 2012:Christmas 2013 
Christmas 2014 will be at goal. 

3. I even managed to do the unthinkable... I opened the box of roses on Christmas Day for guests and did not eat a single sweet, a second box was opened and there is still half a tin under the tree but I am firmly saying the two letter word NO!!!!


4. I am delighted with myself as I type I still have 8pp left from my 49 till Sunday evening. I have had loads of treats so I do not feel deprived!

This blogs post recipes include what we did with our turkey and ham left-overs!

Easy Peasy Mexican Turkey and Ham One Pan Paella  
9pp per person

36pp shared with 4 9pp per serving

Ingredients:
250g Turkey 10pp
140g Ham 6pp
Old el paso one pan paella mix 20pp (1/4 is 5pp)
Peppers and Onions

Method:
Follow steps on box! 

*Note: 4x 165g chicken fillets can be used instead and points will be the same.

Individual Creamy Turkey and Ham Pie 
12pp per person

To make sauce:
Ingredients:
1 packet of  knor chicken soup made up with 400mls of alpro unsweetened almond milk shared with 4 people
or 1/4 of pack and 100mls of alpro unsweetened almond milk (3pp per person)
120mls of ww cream or 30mls of per person
50g Turkey per person (2pp)
70g Ham (3pp)
Tsp sage
Sprinkle salt and pepper

Method:
Make up soup with milk until lumps combined. Add cream and herbs and stir. Chop ham/turkey and put in bottom of dish/plate. Pour sauce over meat. Place pie lid on top. 

To make pastry lid for one person (4pp)

Ingredients
 10g low fat spread (1pp)
30g flour (3pp)
2 tsp water 

Method:
Combline spread into flour until like crumbs. Add water gradually. Roll out to make lid for top of pie. Pierce lid with fork to allow steam to escape when cooking. Bake 30mins at 180.

This is the mixture inside without lid.

Here is a tip if you fancy a cheese board with wine but don't to break the points bank. 


My Cheese Board 5pp
10g Brie (1pp)
10g Blue Cheese (1pp)
20g Oakwood (1pp)
2 Tesco water crackers (1pp)
10g Tuc mini Snax crackers sour cream and onion (1pp)
1 glass of Natureo wine (bottle is 4pp I had a glass left over)

Weigh out everything. Wrap cheese/crackers up and put away before you sit down to enjoy so not to be tempted to eat more!

So 2013 has been an eventful year and decided to see if I could list few good things that have happened/I achieved or started!

1. I got laser eye surgery!...woo no more speccy 4eyes!
2. I travelled to a new city -Edinburgh and also to Spain again!
3. I climbed the highest mountain in Ireland -Carrauntoohill!  
4. I have lost 1 and half since June in dribs and drabs gaining and losing all the time.oops.
5. I threw a 50th party for the most amazing mammy in the world!
6. I fit back into a size 10 trousers.
7. I was chosen to do a sponsored post graduate in RCSI. 
8. I got engaged to the bestest man in the world! :) :)

So here is my 2014 plan/resolutions that I am starting now! :)

1. I plan to get to goal!
 (Hopefully lose aprox 22lbs... its 50 weeks til 15th Dec 2014 week before Christmas 2014... so if my calculations are correct if I loose 1/2 lb every week I will loose 25lbs exceeding my goal!... thats if I don't lose more than 1/2 some weeks and allowing for some bad weeks with gains as well... nobody is perfecto!)



2. I plan to run 5k! and if I succeed I will try 10k womens mini marathon!


Well I thought last years challenge was impossible...And...If i can climb Carrauntoohill anything is possible! 

....maybe I am going insane...??.....Anyone wanna join my couch to 5k then to 10k challenge???.....

3. Buy a house! 

4. Pass my post grad!

5. Set a wedding date... and maybe feel nice trying on wedding dresses! 

6. Eat slower... put knife and fork down between bites. Sit when eating. enjoy each bite and don't eat for sake of eating.

7.  Continue to drink plenty of water!


8. Take time out to relax every so often!

9. Learn to bite my tongue!... think before speaking. 


10. Make more effort to see people I don't see that often!

Oh dear 10...!! :O ........ I hope not too many lol

Christmas!

Hello. Long time no blog!

Well I have had no weigh in for almost 3 weeks... due to working 8 consecutive days in a row then night duty! So, I went to go to a weigh in on Friday afternoon and to my disappointment the class was no longer on!... I decided to ring ww hq and there are classes still on Monday (which is even better can weigh in just before Christmas!)
*anyways according to my own scales I have lost 2.5lb fingers crossed they match!*

Also, I am delighted to find out there are still classes on over the Christmas break defo going to keep me on track!


So the aim of this blog post is outline my Christmas Eve and Day Plan! This plan is put together by the help of my amazing mam!! I couldn't do weight watchers without her!! :)

MY CHRISTMAS EVE 26pp

BREAKFAST: 30g Porridge, sweetener or stewed apple and almond milk (3pp)

LUNCH:  Toasted slimbo (3pp), tomatoes baked with garlic oregano and basil, 10g goats cheese(1pp), slice of ham (1pp) and rocket (Total 5pp)

DINNER: Chicken Korma fakeaway with naan and poppadums after Christmas eve mass. 

SNACKS: Fruit and 3 sweets or a curly wurly

RECIPES:
Chicken korma and rice 
11pp per person add 1 ww naan and 1 pappadum for 15pp per person
Recipe serves 4


Ingredients
500g chicken (12pp)           1tsp oil
1 Onion diced                              1Carrot diced
1 small apple Diced                       20g Pataks korma paste (1pp)
15 g mango chutney (1pp)                       Tbsp passata
1 stock cube make 75mls               240g rice (24pp)
200ml light blue dragon coconut milk (4pp) ( have frozen other half of can before no problems)

Method
Fry onion, carrot and apple in oil. Sweat. Cook chicken. A chutney and korma paste. Then add coconut milk. Simmer and add passata and stock. simmer away till thickens. Cook and serve rice.
Add pappadums  for an  extra 1pp each
Add naan bread for extra pp's weight watchers own 3pp or tesco finest own brand 4pp. 


Scrambled Egg
Ingredients
1 egg, 60ml egg whites dash almond milk  S&P
Method
Whisk all ingedients in a pot sprayed with frylite beat fast so it doesn't burn.




Carrot and Coriander Soup 0pp for pot
Ingredients:
Bag of carrots diced
Bunch of fresh coriander chopped
2 onions
Salt and pepper
Optional 200ml alpro unsweetened almond milk (not quite1pp!)
Vegetable oxo
Method:
Sweat onion. Add carrot. Then add the coriander and salt and pepper. Liquidise in food processor. Simmer. Add the milk if you wish.

                              Serve with a tsp of creme fraiche for 1pp.          

  


Paté
total 13pp or 3pp f&h
Ingredients
230g pork liver (7pp)
2 x Smoked rashers with fat trimmed (2pp)
2 Tbsp 0% low fat greek yoghurt (1pp)
1 onion
3 garlic cloves
Mixed Herbs
Salt and pepper
25mls Sherry (3pp)
Method

Fry onion, garlic, livers and bacon. Do not over-cook the liver. Blitz in food processor, add s&p and mixed herbs. Allow to cool then add yoghurt and sherry. Transfer to container and chill for a few hours or overnight before serving.

Stuffing Balls 
Makes 6 1pp balls
Ingredients
4 slices of slimster into bread crumbs
Onion fried in frylite
Parsely
Sage
Egg white

Method
Whizz all ingredients into food processor and form into balls. Bake in oven. 






Christmas Pudding
179pp makes two 2pint puddings

180g Plain flour (18pp)                                                                   
150g Dark brown sugar (30pp)                                                    
2 Tbsp sweetener (0pp)                                                   
50g Almonds (10pp)                                                               
450g mixed fruit (36pp)                                                           
125g dried apricots (6pp)                                                 
500g sultanas and raisins (40pp)
125g cherries (11pp)                                                                       
225g ww spread (6pp)                                                             
2 eggs (4pp) and 60mls egg white (0pp)                                                 
9pp Slimster Bread for crumbs                                                 
35ml Brandy (3pp)                                                   
35ml Whiskey (3pp)                                                                        
1/2 pint of Guinness/stout (3pp)




Individual Banofees 5pp
Ingredients
1 ww choc biscuit (1pp)
1 Banana
25g Carnation caramel (2pp)
10g squirty cream (1pp)
Flake from box (1pp)

Method
Bash ww biscuit and put in the end of small glass.
Slice banana and layer over.
Put a spoon of caramel over.
Put squirty cream over then crumble flake.

Tip

Freeze the caramel in a few small plastic containers. I found when I keeping it the fridge is too tempting. Very easy to have an extra spoon!


Individual Trifles  2pp each

Ingredients:            
Sugar free Jelly 0pp
tesco dutch bakes 1pp
            Tinned fruit
  1 spoon lf custard

Squirty cream from can/30ml ww cream
10mls sherry
Method:
Put fruit in bottom of small glasses or bowls.
Break the dutch bake up and pour sherry over
Make jelly and pour over the 6 bowls. Put in fridge to set.

Put 1 spoon of custard on each and when serving put tiny squirt of cream on top!












Nigellas Flourless Brownies 92pp recipe
serves 16 (6pp per serving)
Ingredients
150g ground almonds (30pp)
1 egg and 2 chicks egg white (3pp)
Tub ww spread (7pp)
100g caster sugar (20pp)
substitute 100g caster sugar with canderel
2tsp vanilla essence
225g good quality chocolate (32pp)
Method
Mely choc and butter in saucepan over low heat. Careful not to burn! 
Take off heat and mix in vanilla and sugar. Let it cool a bit.
Beat in eggs along with ground almonds. 
Pour into baking tin. 
Bake for 25-30mins  at preheated oven 170degres. 
Allow to cool and cut then serve!
